“hit the spot”には、「（飲食物などが）必要を満足させる、ぴったりだ、申し分がない」という意味ですが、“That hits the spot.”で、「それは申し分がない」という意味になり、そこから、
「こいつに限るね」とか「やっぱりこれだよね」という意味になります。
暑い日に風呂上りに冷たいビールを飲んだときなどに、「プハー！やっぱこれだよね」というふうに、よいタイミングで、美味しい食べ物を食べたり、飲み物を飲んだりしたときに「あ～、これだよ！これ！」という感じで、満足したときに用いられる表現ですね。
日本語の「これ」を表すためには、“it”や“this”よりも“that”の方が自然です。
“Good morning. Here’s your coffee.”
「おはよう。はい、コーヒーよ」
“Oh, thanks. That his the spot. There’s nothing like a great cup of coffee to start the day.”
「ああ、ありがとう。やっぱりこれだよね。一日の始まりに、美味しいコーヒーに勝るものはないね」
