“over somebody’s head”には、「～の理解力を超えて」という意味になります。ので、“It’s over my head.”を直訳すると、「それは私の理解力を超えている」という意味になっています。そこから、「私には難しすぎる」または「難しくて分からないよ」という意味になっています。
同じような意味で、“It’s beyond me.”「私には理解できない」という表現もあります。
“What do you think about that?”
「あれのことについてどう思いますか？」
“It’s over my head.”
「私には難しすぎます」
